  1. Ingredients
    For the base:
    110g softened butter
    100g light brown sugar
    50g granulated sugar
    30ml milk
    1tsp vanilla
    160g (heat treated) plain flour
    ½tsp salt
    100g chocolate chips

    For the cheesecake layer:
    480ml cold double cream
    500g cream cheese
    120g icing sugar
    1tsp vanilla
    100g chocolate chips

    For the topping:
    150g dark chocolate
    150ml hot double cream
    Chocolate chips

    1) Add the butter and both sugars to a large bowl and cream them together.

    2) Add the milk and vanilla and mix until combined.

    3) Add the plain flour and salt and mix to form a dough.

    4) Fold in the chocolate chips and set aside ⅓ of the dough.

    5) Press the rest of the dough into a cake tin and smooth it out.

    6) Whisk the double cream to stiff peaks in a large bowl.

    7) In another large bowl whisk together the cream cheese, icing sugar and vanilla until creamy.

    8) Fold ¾ of the whipped cream into the cream cheese mix.

    9) Fold in the chocolate chips.

    10) Scoop the cheesecake mix onto your base and smooth it out.

    11) Refrigerate for 6 hours minimum.

    12) Make mini dough balls with the remaining dough and put them in the fridge with the cheesecake.

    13) Gently stir the dark chocolate and double cream together in a jug until combined and allow it to cool slightly.

    14) Pour the cooled ganache over the cheesecake and smooth it out.

    15) Pipe the remaining whipped cream around the edge.

    16) Top with the cookie dough balls and chocolate chips.

    17) Refrigerate for 2 hours.
